  • Emperor's Garden Cake & Bakery are seeking a detail-oriented and efficient Pastry Cook to support our daily operations. This is a full time position working 6:00AM - 3PM (with 1 hr break) in our Haymarket team.

    The ideal candidate will be responsible for preparing and baking a variety of buns and pastries, including our high-volume selling items, egg tarts and polo buns, while maintaining quality and efficiency standards. This role requires excellent time management and an ability to work within a fast-paced environment.

    Responsibilities and Duties:
    • Dough Mixing & Processing
      - Precisely measure and combine ingredients to mix dough for a variety of buns and pastries, ensuring consistency and quality
      - Proof dough, weigh portions accurately, and prepare individual bun/pastry types according to specifications
    • Shaping & Filling
      - Shape and portion dough efficiently while maintaining uniformity in size and texture
      - Add sweet and savory fillings and toppings according to the recipes, such as custard, sausage, taro, chicken, beef, mushroom, chocolate, cheese, sesame seeds, pork floss, or other seasonal flavours
      - Prepare pastry skins for bun toppings according to the recipe
      - Prepare custard mixture and fill egg tart shells accordingly
    • Oven Preparation & Baking
      - Preheat ovens to the required temperature and monitor the baking process for a variety of buns and pastries, with each requiring a different temperatures and baking times, ensuring consistency in quality
      - Check and ensure all buns and pastries are ready for baking, e.g. applying egg wash and toppings before baking
    • Stock Maintenance
      - Monitor and adjust production and store inventory levels, ensuring stock availability and minimizing waste of baked goods throughout the day
      - Arrange to make and bake additional buns and pastries if required
    • Kitchen Cleanup
      - Ensure baking trays and egg tart shells are cleaned and stored properly for use
      - Maintain cleanliness of workstations, tools, and baking equipment
      - Follow proper hygiene standards to ensure food safety compliance
    Applicants must hold a relevant trade qualification and have at least 1 year of experience as a Pastry Cook.

    Further Qualifications & Skills Required:
    • Previous experience in bakery preferred
    • Ability to follow recipes and instructions with precision
    • Strong time management skills and attention to detail
    • Comfortable working with baking equipment and temperature-sensitive processes
    • Knowledge of food safety regulations and hygiene practices
    A salary between $73,300 - $73,500 will be offered to the successful candidate.
