Sailing Ingredients Pty Ltd trading as I Maccheroni is an Award Winning restaurant, run by Michelin-star trained Chef in Sydney, serving classic Italian food with Australian influences to use local fresh products.

Responsibilities:- Preparing and presenting high-quality dishes in accordance with established recipes, presentation standards, and service requirements.
- Planning and organising daily kitchen operations to ensure efficient and timely food preparation during service.
- Supervising, training, and mentoring kitchen staff to maintain high standards of performance, consistency, and professionalism.
- Monitoring food quality, portion control, and presentation to ensure consistency and customer satisfaction.
- Assisting with menu planning, seasonal menu development, and daily specials in collaboration with management.
- Managing food preparation, stock rotation, ordering, and inventory to minimise waste and maintain cost control.
- Ensuring all food is prepared, stored, and handled in accordance with food safety, hygiene, and sanitation standards.
- Maintaining a clean, organised, and safe kitchen environment while ensuring all equipment is operated and maintained correctly.
- Complying with all food safety legislation, workplace health and safety requirements, and company policies and procedures.
The Chef position at I Maccheroni requires a highly skilled and experienced culinary professional capable of consistently delivering authentic Italian cuisine in a premium dining environment.
The successful candidate must possess the following skills and experience:- Demonstrated experience as a Chef in a busy, high-quality restaurant, with experience in premium or fine dining environments being highly desirable.
- Advanced knowledge of traditional and contemporary Italian cuisine, including handmade pasta, regional cooking techniques, seasonal menu development, and authentic food preparation methods.
- Proven ability to prepare, cook, and present dishes to a consistently high standard while maintaining quality, portion control, and presentation during high-volume service.
- Strong leadership and organisational skills, including the ability to supervise, train, and mentor junior chefs, apprentices, and kitchen staff.
- Experience in menu planning, recipe development, food costing, stock control, purchasing, and inventory management.
- Thorough understanding of Australian food safety legislation, HACCP principles, allergen management, workplace health and safety requirements, and commercial kitchen hygiene standards.
- Excellent time management skills with the ability to prioritise tasks and perform efficiently under pressure while maintaining attention to detail.
- Strong communication and teamwork skills to coordinate effectively with kitchen and front-of-house staff to ensure efficient service delivery.
- A commitment to maintaining the highest standards of professionalism, cleanliness, consistency, and customer satisfaction.
- Relevant trade qualifications equivalent to an Australian Certificate IV in Commercial Cookery (or higher) together with substantial post-qualification experience in a commercial kitchen.
Salary:- An annual salary of $120,000 plus super will be offered to the successful candidate.
